Let’s make some king fish steak rice, this recipe is super simple to follow. All you will need is some good steaks of king fish and a few spices. It’s a super alternative to the usual pilau with a twist. Let’s cook!
What you will need:
3 slices king fish steaks
1 teaspoon turmeric
1/2 teaspoon garam masala
1 teaspoon garlic ginger paste
Juice of 1 lime
Salt to taste
1 large onion sliced
3 tablespoons oil
2 cups rice
4 cups water
What to do:
Marinate the fish with lime juice, garlic ginger paste, salt, turmeric, garam masala and black pepper. Using your hands, rub the marinade all over the fish steaks, ensuring the marinade is distributed evenly. Set aside for an hour or so to infuse the flavour.
In a pan over medium heat, add in the oil and pan sear the fish until golden brown (about 3 minutes each side). Once cooked remove from the pan and set aside.
Using the same pan and oil, add in the sliced onions and sauté until soft. Add a teaspoon of black pepper then add the rice, mix well until well combined then add in the water bring to a boil. Adjust seasoning with salt, cover with a tight lid then reduce heat to low and let it slow cook until all the water is evaporated.
Remove the lid, arrange the fish steaks on top of the rice then cover for another 15 minutes on low heat or until the rice is fluffy.
Serve on a platter with a side chilli of your choice.
