The last couple of weeks have been downright cold. Soups have been on my menu for a while (to keep me warm) and I am now giving them a break. One can only have so much soup.
A recipe that is a favourite to many is what I am sharing with you today. In under 40 mins, you are on the couch, under a warm blanket, watching TV and enjoying your meal. Instead of minced beef, I have added a twist to it and used turkey and beans and some chilli to keep the cold away.

Ready In: 35 mins
Ingredients:
3 cloves garlic, crushed
4 sticks spring onions, cut in strips
2 tablespoons vegetable oil
2 tablespoons tomato paste
1 tablespoon chilli powder
450g minced turkey/chicken
2 cups chicken broth
200g beans, pre-boiled
3 tablespoons ketchup
1 packet spaghetti
Salt to taste
Directions:
In a large cooking pot, bring water to a boil, add some salt then put the spaghetti to cook, following instructions on the packet.
Over medium heat in a cooking pot, heat the vegetable oil, add spring onion and crushed garlic and cook, stirring until soft. Add the tomato paste and chilli powder, stirring frequently until the mixture is red then add the turkey/chicken, stirring to break it up and allow to cook. When almost cooked through, add the chicken broth, beans, ketchup, stir mixing well then bring to a simmer for about 12-15 mins.
When cooked, the sauce should be thick but soupy.
