Easy recipe: Shepherd's pie

Shepherd's pie was traditionally made with minced lamb, hence the name 'Shepherd's Pie'. However, it can also be made with minced beef or other meats.

It is made with a savoury meat and vegetable filling, topped with creamy mashed potatoes and baked to golden perfection.

So let's dive into the recipe and create a delicious Shepherd's Pie that will warm your heart and delight your palate:

Ingredients:

- 1 pounds ground lamb or beef

- 1 large onion, finely chopped

- 2 carrots, peeled and diced

- 2 cloves of garlic, minced

- 1 cup frozen peas

- 2 tablespoons tomato paste

- 1 cup beef or vegetable broth

- 2 teaspoons Worcestershire sauce

- 2 pounds russet potatoes, peeled and cut into chunks

- 4 tablespoons butter

- cup milk

- Salt and pepper, to taste

Instructions:

Preheat your oven to 200C. In a large skillet, cook the ground lamb or beef over medium heat until browned. Remove any excess fat from the skillet.

Add the chopped onion, diced carrots, and minced garlic to the skillet and cook for about five minutes, until the vegetables have softened.

Stir in the tomato paste and cook for an additional minute, ensuring it is evenly distributed.

Pour in the beef or vegetable broth and Worcestershire sauce. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavours to meld together.

Add the frozen peas to the skillet and cook for another 2-3 minutes until heated through. Season with salt and pepper to taste. Remove the skillet from heat and set aside.

For the mashed potato topping:

Place the peeled and cut potatoes in a large pot of salted water. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender about 15-20 minutes.

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Using a masher or a hand mixer, mash the potatoes until smooth and creamy. Adjust seasoning if needed.

Assembling the Shepherd's Pie:

Transfer the meat and vegetable mixture from the skillet into a deep baking dish or casserole dish. Spread it out evenly.

Spoon the mashed potatoes on top of the meat mixture. Spread the potatoes in an even layer using a spatula or the back of a spoon.

Using a fork, create ridges or patterns in the potatoes. This will give the pie a nice texture when it bakes.

Place the dish in the preheated oven and bake for about 25-30 minutes until the potatoes are golden brown and the filling is bubbling around the edges.

Remove from the oven and let it cool for a few minutes before serving. Enjoy!
