How to prepare delicious matoke

I was not so sure about this recipe when I came across it. But I was amazed at the taste - sweet from a distance with an amazing curry taste.

Having studied in India, I love curry - any type of curry. My love for spices sometimes can go off the chart.

So... my best friend brought me matoke (green bananas) from the village (a whole big bunch) and as is usual, I wanted to try something new.

A former workmate always told me “Google is your friend” and for this, I did.

I tried a few recipes and this was the best of them all, with a whole lot of changes to get it just right.

Serves: 1-2

Prep Time: 20 mins Cook Time: 30 mins Ready In: 50 mins

Ingredients:

4 matoke (green bananas), unpeeled 1 teaspoon cumin seeds 1 small onion, finely chopped Dried chillies (as many as you prefer)  ½ teaspoon turmeric powder 2 tablespoons vegetable oil Salt to taste Water

Directions:

Wash the bananas thoroughly and place them unpeeled in a cooking pot, cover with water then bring to a boil for 20 mins.

Peel them, then slice to pieces or chunks. Heat a deep pan. Once hot, toast the cumin seeds – ensure that they do not burn.

Add oil, chopped onions and cook until slightly browned. Add the chillies and turmeric and fry over low heat for about five minutes.

Add the chopped bananas, stir then add a cup of water (add more water if bananas are not soft enough) then allow to cook until the bananas are soft.

Serve with chapati.
