One thing about the daughters of Mumbi, is the Agikuyu, they will peel potatoes before deciding what meal they are making.

For today's recipe, we all have to be like this community.

The only difference is that as we peel the potatoes, we will know what to cook.We will be learning how to make 'mukimo'.

This meal combines mashed vegetables, particularly potatoes, green peas or beans, corn, and greens.

In as much as a lot of ingredients are involved, it is an easy-to-make meal that can be enjoyed on its own or as a side dish.

Here is how to create this delicacy.

Ingredients:

4 large potatoes, peeled.

2 cups of githeri (a combination of beans and maize)

2 cups chopped mixed greens (such as spinach, collard greens, or kale)

1 large onion, finely chopped

2 tomatoes, diced

2 tablespoons vegetable oil

2 cloves garlic, minced

1 teaspoon ground cumin

Salt and pepper to taste

Water for boiling

Instructions:

Place the peeled potatoes in a large pot and cover them with water. Add a pinch of salt to the water to season the potatoes.

Bring the water to a boil and cook the potatoes for 10 minutes. Add in the already cooked githeri and greens.

Let the mixture boil until the ingredients are tender. Drain the combination.

Mash the ingredients with a cooking stick or potato masher until smooth. In a different pot, heat vegetable oil over medium heat.

Add the chopped onion and saute until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the diced tomatoes, ground cumin, salt, and pepper to the mixture.

You can decide to pour the mixture on the mashed potatoes or put the mashed potatoes in the pot with tomatoes.

Either way, mix the two combinations until the oil and flavours are well incorporated. Serve hot as a main or side dish with your favourite protein. Enjoy!
