Let's make coconut plantains with potatoes combo. We call this matoke ya nazi.

What you need

10 medium size green bananas (green plantains), peeled, halved and boiled

3 large potatoes peeled (boiled with plantains)

500g beef, boiled until tender

1 onion, sliced

1 teaspoon garlic ginger paste

1 teaspoon curry powder

Juice of 1 lime

100g thick coconut cream

1 tablespoon vegetable oil

Salt to taste

What to do

In a deep non stick pan over medium heat, add oil and saute onions until soft. Add garlic ginger paste, curry powder and salt to taste. Stir until fragrant about 2 minutes. Add in the boiled beef and continue to saute. Go in with half of the thick coconut cream, stir and let cook until sauce is thick. Once thickened, add in the boiled matoke and potatoes. Stir with a spatula so the sauce can coat the matoke. Attempt to partly mash them. Add lime juice and the remaining coconut cream and cook for 5 minutes. Once reduced and thick, sprinkle chopped coriander and serve the 'ndove za nyama' with a side of pilipili. Enjoy.
