As I promised, we will do a series of rice recipes. This week we will mix the cooked rice with some cabbage, carrots, onions, bell peppers and a few spices to make it fun and keep it vegetarian.
This is one of the most delicious recipes I have made using leftover rice. It is amazing how the fantastic fusion turns out once everything is ready. Let’s cook.
What you will need:
200g or 1 large bowl cooked rice
1/2 cabbage, thinly shredded
1 tablespoon oil
1 onion, sliced
1 carrot, grated
1 sweet pepper (hoho), diced
1 teaspoon curry powder
1 teaspoon paprika
1 teaspoon garlic paste
4 whole green chillies
Salt to taste
Fresh coriander for garnish
What to do:
In a wok over medium heat, pour vegetable oil and add in sliced onions. Sauté until soft.
Add in diced sweet pepper, then grated carrots. Mix well using a wooden spatula.
Once the mixture is soft, add the garlic paste and curry powder. Mix well until fragrant. Add the paprika and continue to sauté until everything is well combined.
Add the shredded cabbage and continue to cook until the cabbage shrinks and becomes soft. Add some salt to taste as it continues to cook then add in the whole green chilies. Mix well.
Now add in the cooked rice and continue to cook for another five minutes or until everything is combined well and the rice is fluffy.
Serve as a meal on its own and enjoy.
