For all those who went for Summer tides festival, it is evident you all had fun. The pop and colour exuberating from videos and pictures on social media tell it all. For those who did not go , let me bring the summer vibe to you with a sensational recipe of a fruity mocktail. The Summer Cup Mocktail takes 15 minutes to prepare. This mocktail is particularly dairy-free, gluten-free, egg-free, vegan and vegetarian.

INGREDIENTS:

(120ml) Clear, Sparkling lemonade.

(1cm)A thick slice of Cucumber.

1 branch of Mint.

A couple of Frozen red berries.

FOR DECORATING OR GARNISHING:

To make the Summer Cup mocktail more attractive and colourfully can use frozen berries, a cucumber slice, mint, citrus or chopped fruits. Remember, all of these are optional.

METHOD:

STEP 1.

Start by cutting up the mint twig and cucumber into small pieces. Then gently boil (200ml) water in a pan and add the cucumber and mint. You then turn the heat off and leave it to cool for two minutes. Grab a handful of frozen berries and add to the mixture. Let the frozen berries defrost for a minute and then gently crush them. You can use the back of a spoon. Carefully strain the mixture and keep it in the refrigerator. It will stay in the refrigerator for up to 24 hours. The mixture will be enough to make four drinks.

STEP 2.

In a tall glass, pour the strained mixture(40ml) and add a handful of ice. Then add (120ml)lemonade. It is time to decorate. You can garnish with any chopped fruit of your choice or mint leaves with some frozen berries. Stir gently until it combines perfectly.
