Oven-roasted fish with veggies [Courtesy]

Today we make oven-roasted fish with veggies.

Ingredients:

1 whole fish (sky emperor or tilapia about 1kg)

Juice of 2-3 lime or lemon

Salt to taste 

1/4 cup olive oil

2-3 tablespoons soy sauce 

2 tablespoons paprika powder 

1 teaspoon turmeric powder

50g tomato paste 

3 tomatoes, sliced 

2 onions, sliced 

2 capsicum, sliced 

Method:

Split the fish from the centre and spread it flat and wide like a butterfly.

Squeeze in the lime juice and sprinkle salt.

Place the fish on a baking tray lined with foil.

Bake in an oven at 180°C for about 15 minutes.

While the fish is in the oven make the marinade.

In a bowl, add the olive oil, soy sauce, tomato paste, lime juice, paprika and turmeric powder. Mix thoroughly.

Remove the fish from the oven and spread the marinade over the fish.

Place the tomatoes, onions and capsicum on the sides of the fish in the baking tray, and roast in the oven for another 30 minutes.

Eat with plain rice or ugali. Enjoy!
