Ingredients:
1kg Potatoes, cubed (boiled)
1 onion, sliced
1 teaspoon garlic ginger mince
3 tablespoons oil

1 fresh tomato purée (blended)
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon turmeric
1 teaspoon coriander powder
1/2 cup Tamarind extract/sauce (ukwaju)
70g tomato paste
2 chicken cubes (bouillon cubes) or salt to taste
1 tablespoon sugar
What to do
In a pan over medium heat, pour in the oil and sauté onions until golden brown. Go in with garlic ginger paste, add the curry leaves, capsicum and tomato purée and mix well.
Now add the black Pepper, cayenne pepper, turmeric and Coriander powder. Give it a good mix then go in with the Tamarind sauce and tomato paste. Add the chicken cubes or salt to taste, then add the sugar.
Cook until thick and then add in boiled potatoes. Let it cook until sauce coats the potatoes and you see some oil bubbles appearing on the side of the pan.
Sprinkle some extra limru as a garnish and enjoy with your favourite naan and some chicken. Enjoy.
