Egg and fries comboThis duo is a popular one here in Kenya.
For this dish, you will first prepare some fries and set them aside. In a dish, crack one or two eggs, add some salt, black pepper and curry powder then mix properly. Next, you need to fry some onions in a pan and when ready add in the eggs and let them cook until they are about 80 per cent cooked and still wet.
Finally, mix in the fries until they are ready and serve.
Once you master the basics, you can add your own interesting ingredients like garlic and any other spice that blends well with this combo.
Scotched eggsOnce you have scotched eggs, you will probably be tempted to make them your go-to snack every time.
All you need to do is boil a few eggs until they’re ready, and as you do that, pour breadcrumbs into one bowl and one beaten egg into another. In the bowl with the egg, mix in some salt and black pepper.
Once your eggs are properly boiled, let them cool first before removing the shell carefully then heat up a pan with some oil. Next, dip the boiled eggs in the egg mixture and coat them with bread crumbs, one at a time.
Shallow fry until the coating has turned golden brown and you’re done.
Egg curryIf you’re tired of making the same meals every day and you’re looking for something different, this is the recipe for you.
You will start by boiling some eggs until they are ready. Once they are ready, let them cool, remove the shell and slice them in halves.
Next, fry some chopped onions and garlic until they’re ready then add your chopped tomatoes and tomato paste as you normally would with any other dish. As they cook, sprinkle in some salt, curry powder, turmeric powder, garam masala and a pinch of cardamom if you want to add a more unique flavour.
Give time for the tomatoes to soften and for the spices to cook, as you add some water in small bits until you get a thick sauce.
When it’s almost ready, add your egg slices and let the curry simmer for a few minutes, then serve with some rice.
Cinnamon French toastThis recipe adds an interesting spin to the usual French toast with a mild, sweet flavour.
In a wide, flat, bowl, crack two eggs then beat them and mix in some milk(optional), a pinch of salt, a teaspoon of sugar, a bit of cinnamon powder and vanilla extract.
Mix them properly, prep your pan with some oil or butter then once it is hot, dip your bread in the egg mixture and fry on both sides until they are ready. Serve with a drizzle of chocolate sauce, berries or whipped cream.
Mushroom frittataThe key to making this come together beautifully in a non-stick pan.
In a bowl, mix some beat eggs with a pinch of salt, black pepper and shredded cheddar cheese.
Next, fry some sliced white onions (not chopped) and garlic in the pan and when done, add some sliced button mushrooms. Once the mushrooms are soft pour in the egg mixture then distribute evenly.
If you like, arrange some sliced tomatoes on top and sprinkle another layer of cheese before covering with a lid until everything is well cooked on low heat.
