During the rainy season, there are a lot of insects flying around but there are these specific ones that fly around your light bulb in swarms.

They are as big as bees with wings resembling those of the wasps although they don't buzz and are mostly referred to as 'kumbekumbe'.

In English, the insects are referred to as flying or winged termites. Kenyans are not popular for eating insects like grasshoppers, but winged termites are a popular delicacy, mostly in rural areas.

They are very nutritious, making them one of the few insects consumed by Kenyans.

The method of preparing them is very simple, and we will be learning how to make them.

Ingredients:

250g Winged termites

1 Onion

Pepper (optional)

Salt

Instructions:

Wash the termites and remove any wings. Preheat a cooking pot.

Put the termites in the cooking pot and add salt to taste. Add in the onion and keep stirring.

Stir for 5-8 minutes until the termites are brown. Serve while hot with ugali. Enjoy!
