Chicken breast and veggie noodles [Courtesy, Chef Ali Mandhry]

Today we make chicken breast and veggie noodles.

Ingredients: 

2 teaspoons butter

1 onion, sliced

2 packets noodles (cooked as per instructions)

200g chicken breast, pan-seared and cut into small pieces 

1 teaspoon garlic ginger paste

200g broccoli (blanched)

Juice of one lime

50g tamarid purée (ukwaju)

1 teaspoon turmeric powder

Salt and pepper to taste

Method:

In a pan over medium heat add the butter and onions.

Sauté the onions until golden brown.

Add the garlic ginger paste, turmeric powder and broccoli and sauté.

Once cooked add the tamarind purée and mix well.

Add the noodles and simmer until the liquid is almost evaporated.

Adjust the seasoning with salt and pepper.

Add the chicken, and some extra lime juice and mix.

Serve as a meal on its own. Enjoy!
