Breakfast is a very precious meal, but people don't pay much attention to it.
Some people eat breakfast in a hurry. In such a hurry, they can only have a cup of coffee or tea and bread or mandazi.
They forget that there are other accompaniments like pancakes and waffles. These two have the same recipe, but the proportions of the ingredients are different.
To make fluffy waffles, separate the egg whites from the yolks and beat the whites until you get white peaks.

Ingredients:
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 3/4 cups milk
1/2 cup vegetable oil or melted butter
1 teaspoon vanilla extract
Instructions:
Preheat your waffle iron.
In a large bowl, whisk together the flour, sugar, baking powder and salt.
Whisk the eggs in another bowl. Add the milk, vegetable oil or melted butter and vanilla extract and mix well.
Pour the wet ingredients into the dry. The mixture may be a little lumpy, but avoid over-mixing to ensure fluffy waffles.
Lightly grease the waffle iron with a little oil. Pour the batter into the preheated waffle iron, using about 1/2 to 3/4 cup of batter per waffle. You can adjust this to suit the size of your waffle iron.
Close the waffle iron and cook until the waffles are golden brown and crispy. This usually takes about 3-5 minutes, but cooking times may vary depending on your waffle iron.
