3 whole eggs
Butter for pan-searing
2 Mangoes cut into cubes
50ml Honey
What to do:
In a medium bowl put in the eggs one by one. Beat the eggs with a hand whisk until fluffy.
Add in the milk and continue to whip until the mixture is combined; go in beat by beat with the flour.
Continue to whip gradually until the mixture is nice and thick. Add the sugar, cinnamon powder, a pinch of salt, and vanilla essence and continue to mix.
Go in with one heaped teaspoon of baking powder, mix well until combined and set aside.
Place a nonstick pan over medium heat. Add a teaspoon of butter, then use a ladle to pour the pancake mixture onto the pan. Make one pancake at a time, flipping it after one minute, and continue to make the rest.
The pancakes will be thick and fluffy. Top them with cubed mangoes and drizzle the honey on top.
Serve and enjoy.
