Fried rice is an easy one-pot meal and a simple way of using any leftovers in your house. It is simply a mixture of cooked rice, vegetables, eggs and spices for a flavourful kick.
Here is how to make a tasty fried rice meal.
Ingredients:
2 cups of leftover rice.
2 eggs.
1 red onion.
2 carrots.
1 cup of peas.

2 garlic cloves.
2 tablespoons of cooking oil.
1 tablespoon soy sauce.
Salt to taste.
Black pepper.
Instructions:
Dice your carrots, mix them with the peas, and boil them for about 5-7 minutes in a small pot. Finely chop your onion and add it to a large skillet, fry till golden brown.
Drain your peas and carrots, add them to the onions and stir well. Mince your garlic then add it, beat your eggs and start pouring it over the mixture as you scramble it.
Cook it for about 3-4 minutes till the eggs are correctly scrambled and the vegetables have gotten mixed well. Do not forget to add salt and black pepper to taste.
Add your rice to the vegetables and stir well, let it cook for a while before adding your soy sauce for added flavour.
Toss your rice to ensure it is properly coated and that all the flavours are infused.
Your meal is now ready, serve in bowls and garnish with green onions for that extra freshness and crunch.
