When we think of carrots, we see them as a vegetable we put in stews, salads or cakes. However, we can also use this nutritious vegetable to make smoothies and juice.
If you are wondering why carrots are such a big deal, we can start with the most common reason; that they improve eyesight.
Besides improving your eyesight, some studies, including one highlighted by The National Center for Biotechnology Information, show that carrots may have some cancer prevention benefits. They can also be very beneficial in lowering cholesterol levels and reducing the risk of heart disease.

1 lime
1 cup of water
Fresh ginger
Sugar or honey (optional)
Step one
Wash and peel your carrots well. When done, chop them up into smaller cubes and place them in your blender or juicer. Next, wash your ginger well to remove any dirt. You will then slice them up into smaller pieces then add them to your blender.
The next step is to add one cup of water to the mixture. Once you're done, seal your blender or juicer and blend well.
Step two
Take a jug and a strainer. Strain the juice through and discard the extra pulp.
Next, slice your limes and squeeze in the juice through the strainer to remove the seeds and pulp. If you don't mind having the pulp in your juice, you can remove the seeds carefully and squeeze the juice into the mixture directly.
When done, you can add in some sugar for a bit of sweetness. For healthier options, you can go for brown sugar or honey. Mix well to blend all those unique flavours.
Finally, it's time to serve. If you want to enjoy it as a cool drink on a hot day, you can add some ice cubes to your glass. To complete this carrot juice cocktail, garnish and enjoy.
Tips:
With this recipe, you can try out different interesting combinations. You can swap out the limes for pineapples, lemons or oranges then see which one you love most.
If you're also someone who also loves a bit of spice in your juice, you can also try adding a pinch of cardamom or cinnamon.
Enjoy!
