Today we make goat roast and veggie rice perfect.
Ingredients:
For the goat;
1 whole goat leg or shoulder
1 teaspoon garlic paste/mince
1 teaspoon ginger paste/mince
1 teaspoon black pepper powder
1 teaspoon turmeric powder
1 teaspoon curry powder
100g tomato paste
Salt to taste
1/4 cup vinegar
3 tablespoons vegetable oil
Method:
Massage all the ingredients on your scored goat meat. Tightly wrap it in a kitchen foil and roast in an oven at 180C for three hours.
For the rice;
2 cups basmati rice
3 cups water
3 carrots cut into julienne (long thin strips)
2 onions, sliced
2 tomatoes, diced
1 teaspoon jeera/whole cumin
Salt to taste
2 tablespoons oil
Method:
In a pot add the oil and saute the onions until soft.
Add the jeera and cook until fragrant.
Now add the tomatoes, mix and cook until soft.
Add the salt and the rice and mix well, then add the water.
Once the water evaporates cover and steam until fluffy for about 15 minutes on low heat.
Serve with the goat leg and gravy from the meat and a salad of your choice. Enjoy!
