Method:
Prick the goat meat with a knife and stuff the garlic cloves in the pricked spots of the meat. Sprinkle the nyama choma mixed spices, and salt on the near.
Pour the oil and white vinegar on the meat and rub well with your hands.
Turn the meat and repeat the same.
Now tightly wrap the meat with aluminium foil, ensuring no air can pass through (use about three to four layers of foil).
Roast in an oven at 200C for three hours.
For the rice:
2 tablespoons vegetable oil
1 teaspoon whole cumin
1 teaspoon whole black peppercorns
1 teaspoon garam masala
2 dry lemon
2 bouillon beef cubes
2 cups basmati rice
3 cups water or stock
Salt to taste (optional)
Method:
In a pot over medium heat saute the cumin. Add the black peppercorn, garam masala, and lemon and mix.
Add the rice and pour in the water. Crumble in the beef cubes and mix.
Add salt to your liking (this is optional as the cubes already have salt). Cook until fluffy.
For the sauce:
1 tomato, diced
2 onions, diced
3 mint leaves
1 garlic clove
Salt to taste
1/4 cup vinegar
1/4 cup water
Blend everything until smooth and pour into a bowl.
Serve your meal on a platter. Enjoy!
