What you will need
500gm potatoes, peeled and cut into small bits
1 cup heavy cream
1 cup milk
1 teaspoon garlic mince
salt to taste
1 teaspoon black pepper
1 onion sliced
Juice of 1 lime
What to do
Put the potatoes pieces into a pan, and cover with water. Bring it to a gentle simmer until the potatoes are soft enough for a knife to pierce easily.
Drain the water and put them back in the pan. Add the milk and pepper the salt and garlic mince. Follow with the onions and add in the heavy cream.
Boil for about 10 minutes on gentle heat until it starts to thicken and the potatoes pieces soften some more. Adjust seasoning and serve as a meal on its own.
