Easy recipe: Sweet 'n' sour tamarind sauce

A number of people only depend on five-star restaurants to give them the five-star meal package yet this is something that can be made from home.

One of the ways one can spice up their food is by including sauces in the meal.

This is however a very rare practice as people think making sauces is hard and costly.

Apart from wanting to spice up the meal, sauces play other roles including adding flavour and moisture as well as improving the texture of your food.

Today, we shall be learning how to make sauce from tamarind otherwise known as ukwaju in Swahili.

Ukwaju has a tart taste that serves the same purpose as lemon or lemon juice while making porridge. It can also be used in meat curries as well as marinating food before grilling.

Without further ado, let's get straight to making the sweet and sour tamarind sauce:

Ingredients:

Fresh tamarind/ Ukwaju

3 tablespoons of honey or sugar

3 blended or grated tomatoes

2 cloves of garlic

Fresh ginger

1 tablespoon of paprika

1 tablespoon of coriander

Salt

Black pepper

Fresh chillies

Instructions:

Soak the tamarind in hot water for 20 minutes until it softens up. Let it cool then use your hands to squeeze all the juices out from the fibres and seeds.

Sieve the liquid and put aside the thick brown liquid which will make up the sauce. Heat a teaspoon of vegetable oil and add ginger and garlic.

Cook them for two minutes until they start releasing a fragrance. Add the paprika and coriander. Let these toast for a minute on medium heat then stir. Enjoy!
