Today let's make Swahili beef stew (mchuzi wa nyama).
Ingredients:
1kg beef, cut into cubes (boiled until soft)
2 garlic cloves
Juice of 1 lime
1 teaspoon black pepper
2 sticks cinnamon
1 onion, sliced

1/2kg potatoes, peeled and halved
2 tomatoes, diced
2 tablespoons tomato paste
2 teaspoons mchuzi mix
2 tablespoons cooking oil
3 cups water
Salt to taste
Method:
On a chopping board, finely chop the garlic cloves and place them on the meat. Add black pepper and cinnamon to the meat.
In a pan over medium heat drizzle the oil. Add the onions and saute until near golden brown.
Add the potatoes and mix, then add the beef and cook for about five minutes. Dilute the mchuzi mix in half a cup of water and add the tomato paste. Mix well.
Add the tomatoes and cook for about five minutes. Now add the three cups of water and cook for 10 minutes or until the liquid reduces and the sauce becomes thick.
Add the lime juice and adjust the seasoning. Serve with rice, ugali or chapati. Enjoy!
