Eggs are a favourite in most households as they can be made differently, served at any time of the day and are not only affordable but readily available.
Scotch eggs are a fun and playful way of preparing eggs for breakfast or even brunch. Here is an easy recipe you can try out.
(For 2 people)
Ingredients:
6 eggs.
kg ground sausage meat.
cup all-purpose flour.
2 tablespoons of mixed herbs or chopped chives.

Bread crumbs.
50 ml milk.
2 garlic cloves.
Black pepper.
Paprika.
Salt to taste.
Vegetable oil to fry.
Instructions:
In a large saucepan pour in cold water and hard boil 4 eggs for about 10 to 15 minutes. Take a bowl a put in your sausage, add in your spices as preferred and mix well.
To the sausage add in your chopped mixed herbs for that extra kick of flavour. Drain the eggs and transfer them to a bowl with cold water.
Shell your eggs and set them aside. In a small bowl add the remaining 2 eggs, salt, milk, pepper and mix well. (will be used for coating the eggs)
Pour your flour on a plate followed by your bread crumbs on another plate and arrange the plates in a line. (coating station).
Take a small portion of your sausage and create a patty-like shape, then roll it out enough to cover the egg ensuring that it is not too thin or too thick and using your hands make sure the sausage is smoothened into the egg shape.
Cover the entire egg properly and repeat the procedure with the other 3 eggs. Dip each egg in flour, then egg then breadcrumbs, and then dip back in the egg and breadcrumbs to give it 2 coats.
Place prepared scotch eggs on a plate ready for cooking. Fill a large pan way with cooking oil and wait for it to be hot before deep frying the eggs.
Using a slotted spoon dip your eggs one by one into the oil and fry them till golden brown and crispy on the outside. Drain them in a kitchen towel before serving.
One can serve them with fries, toasted bread or even a simple salad. Enjoy!
