With mangoes in season, here is a delicious pilipili recipe that you can make at home and store for up to three months, pair it with any of your favourite meals at home.
What you will need: -
4 tablespoons oil (or more)
1 teaspoon garlic, minced
10-15 green chillies, diced
2 tomatoes, diced
2 raw mangoes, cut into strips (julienne)
4 carrots, cut into julienne

Salt to taste
1 tablespoon chilli flakes
1 teaspoon cayenne pepper
1 tablespoon paprika
70g tomato paste
1 cup tamarind extract (ukwaju sauce)
What to do: -
In a pan over medium heat the oil. Saute the garlic ginger minutes until nice and soft, add in the sliced green chillies. Mix well then go in with the tomatoes. Give it a good mix.
Now add your mangoes go in with the salt to taste, and the chilli flakes, the cayenne pepper and paprika. Give it a good mix then add the tomato paste. Finish off with one cup of tamarind extract.
Bring it to a boil until all the liquid is almost evaporated and the oils bubble up once you see the oils visibly you are ready to serve with your favourite pilau, biryani or any of your favourite meals at home.
TIP: Store this in an airtight container and keep refrigerated for use for up to three months.
