We all love goat meat and for some reason, it always tastes nice from your local ‘nyama choma’ guy. I came up with this recipe on one of my experimental days in the kitchen. And after this, trips to my ‘mbuzi choma’ guy have reduced (it’s cheaper when I grill at home)

Ingredients:
2kgs goat ribs
2 tablespoons vegetable oil
Salt and pepper to taste
4 cloves garlic, crushed
½ cup dhania, finely chopped
2 tablespoons light soy sauce
Directions:
In a class bowl, mix the vegetable oil, soy sauce, garlic, salt and pepper. Spread it evenly on the goat ribs, cover and marinate for four hours or overnight.
Pre heat your oven – Gas mark 5/2000C
Open fire – Light a charcoal grill
Oven grilled: Place the ribs on an oven tray, then place into the oven and let grill, keep turning ribs and brush with the marinade juices until cooked.
Grill over open fire: Place the ribs on the grill wire, brushing with marinade juices as you keep turning over until cooked through. Once cooked, cut and serve hot.
