2 cloves garlic, minced
Minced beef
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 cup beef broth
2 tablespoons tomato paste
1 cup of frozen peas
Salt and pepper to taste
For the mashed potato topping:
Potatoes, peeled and cubed
1/2 cup milk (or cream)
4 tablespoons butter
Salt and pepper to taste
Instructions:
Heat the oil in a large skillet over medium heat. Add the onion, carrots, and celery, and cook until softened for about 5-7 minutes.
Add the minced garlic and cook for another minute. Add the minced beef and cook, breaking it up with a spoon, until browned.
Stir in the thyme, rosemary, tomato paste, and beef broth. Season with salt and pepper then add the frozen peas.
Simmer for 15-20 minutes or until the sauce has thickened.
While the filling is simmering, boil the potatoes in salted water until tender for about 15-20 minutes. Drain the potatoes and return them to the pot.
Mash the potatoes with the milk (or cream) and butter until smooth. Season with salt and pepper.
Assemble and bake:
Preheat your oven to 180°C. Pour the meat filling into a baking dish. Spread the mashed potatoes evenly over the filling.
Use a fork to create ridges in the mashed potatoes. Bake for 25-30 minutes or until the topping is golden brown and the filling is bubbling.
Let stand for 5 to 10 minutes before serving. Enjoy!
