Today we make pasta in mince meat sauce.
Ingredients:
350g pasta, boiled
500g minced meat
2 whole tomatoes
2 green capsicum
2 onions (1 chopped and 1 roughly cut)
120g tomato paste

Juice of 1 lime
1/4 cup tamarind paste (ukwaju)
1/4 cup vinegar
1 teaspoon black pepper
2 teaspoon turmeric
1/2 teaspoon paprika
1 tablespoon oil
Salt to taste

Method:
Cut the tomatoes into quarters. Cut the sweet peppers into two, remove the seeds from the inside, and roughly cut them.
Put the tomatoes, pepper, roughly cut onion, vinegar, garlic and tamarind paste into the blender. Blend until smooth and set aside.
In a pan over medium heat add the oil and chopped onion.
Sauté until golden brown. Add turmeric, paprika and black paper. Mix well.
Now add the minced meat, and cook until it is brown.
Add the lime juice and cook until the minced meat is almost dry.
Add the blended mixture, tomato paste and salt and cook for about 10 minutes or until the mixture is thick.
Add the boiled pasta and mix well to allow the sauce to coat the pasta.
Cook for three minutes then garnish with coriander.
Serve hot. Enjoy!
