What you will need:
1kg chicken cut into 8 - 10 pieces
1 onion diced
1 tablespoon minced garlic

1/2 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon curry powder
1/2 teaspoon cardamom powder
3 cups basmati rice
4 cups water
Salt to taste
1 capsicum diced
3 carrots sliced or diamond cut
2 dried limes
What to do:
In a saucepan, add the oil, sauté the onions and garlic, then add the chicken and cook until golden brown, then add the black pepper, cumin powder, coriander powder, turmeric powder, curry powder and cardamom, cook until fragrant, then remove the chicken from the saucepan.
Using the same pan, add the basmati rice, mix well, then add the dried lime, capsicum and carrots, add water and salt to taste, simmer until all liquid has evaporated, place the cooked chicken on the rice and cover, steam for another 15 minutes, serve with pilipili. Enjoy!
