In a cocktail shaker 3/4 full with ice, pour in Johnnie Walker Gold Reserve, homemade apple cordial then shake vigorously for 30 secs.
Pour all the contents into a highball glass then top up with ginger ale.
Garnish with a dehydrated caramelized apple wheel and dashes of angostura bitters.
How to make the Homemade Apple Cordial.
2 Whole Apple (diced).
2 Cups Apple Juice.
2 cinnamon sticks (2inches).
60ml fresh lemon juice.
120ml Aqua faba (canned chick peas juice).
Procedure.
Place the diced apples, cinnamon stick and the juice on a sauce pan. Cook on low heat for 10 minutes, ensure to keep stirring gently until the diced apples are soft.
Place aside to cool then using a fine strain or a cheesecloth, filter the new liquid. Press the cooked apples gently to acquire as much apple flavours into your new liquid as possible.
Add in the lemon juice and aqua faba. Store in a sanitized air tight jar then refrigerate.
This cordial can last 3 months.
For a mocktail.
Pour 120ml of the cordial into a highball glass 3/4 full of ice. Top up with your favourite mixer, Sparkling water or a Ginger ale.
