Happy weekend! Today we make whole roasted goat leg with raisins and jeera rice
Ingredients:
1 whole goat leg
2 teaspoons black pepper
2 teaspoons garam masala
2 teaspoons paprika
2 teaspoons ginger
2 teaspoons turmeric powder

2 bouillon beef cubes
Salt to taste
150g tomato paste
3 tablespoons vegetable oil
1/4 cup white vinegar
1 bulb of garlic
3 tablespoons olive oil
100g raisins
Method:
Prick the goat meat all over with a knife. Sprinkle all the ingredients over the meat and massage well so that all the flavours infuse.
Cut the garlic into two and place it over the meat. Tightly wrap the meat with aluminium foil (use multiple layers of foil to ensure no air goes through the foil)
Roast in an oven at 180C for three hours. Remove from the oven and let it rest for 15 minutes.
Remove the foil and place it over your cumin rice. In a pan over medium heat add the olive oil and saute the raisins until they puff up.
Pour the cooked raisins over the meat and serve. Enjoy!
