Today we make creamed sukuma, beef curry and ugali. This meal is a win in many Kenyan homes and absolutely delicious.
What you need:
500g beef, cut into cubes
2 garlic cloves
5 tablespoons raw paw paw purée
Juice of 1 lime
1 teaspoon black pepper
1 onion, sliced
1 sweet pepper, sliced
2 tablespoons tomato paste
2 beef cubes
1 teaspoon curry powder
2 tablespoons oil
4 tablespoons buttermilk (lala)
2 cups water
What to do:
On a chopping board, finely chop the garlic cloves. Rub the garlic on the meat, add black pepper, paw paw purée and set aside to marinate for about an hour or two.
In a pan over medium heat, pour the oil, add the onions and sauté until almost golden brown. Add the sweet pepper, mix well then add the marinated beef. Cook for about five minutes. Now add the buttermilk, beef cubes, curry powder and tomato paste.
Mix well and cook for about five minutes. Add water and cook for 10 minutes, or until the sauce becomes thick and coats the beef. The beef should be super soft by now. Sprinkle lime juice and serve on a sinia with ugali and creamed spinach.
Creamed sukuma
1 bunch spinach, shredded
1 bunch sukuma, shredded
2 tomatoes, diced
1 onion, sliced
1/2 cup cooking cream
2 beef cubes
What to do:
In a wok over medium heat, drizzle half a tablespoon of oil in a pan. Add the onions and sauté. Put in the tomatoes and cook until tender.
Crumble the beef cubes and mix well. Now put in with the spinach and sukuma and cook for about five minutes, or until the vegetables are soft.
Add the cooking cream, and cook for two minutes. Enjoy!
