It is a long weekend and a good time to indulge in a simple, delicious and healthy recipe.
What you need:
For the chicken
1kg whole chicken with skin
Juice of two limes
Salt to taste
Half teaspoon black pepper
Half cup vinegar
For the veggies
A quarter kg okra
One onion, sliced
Three carrots, diced
1 tablespoon oil
Salt and pepper to taste
Juice of one lime
Clove of garlic, crushed, Ginger, crushed
What to do:
Pour vinegar on the chicken. Let the chicken soak in the vinegar for about 10 minutes, then wash the chicken. Mix the salt with the black pepper and rub over the chicken.
Add the juice of the lime over a baking tray. Tie the chicken legs with cotton twine and bake/roast in the oven at 200 degrees Celsius for about an hour, or until the skin is golden brown and the chicken juices run clear.
In a pan over medium heat, drizzle the oil on the onions. Add in the garlic-ginger paste and mix well. Now throw in the okra and carrots.
Season with salt and black pepper, and cook for about 10 minutes. Pour in the lime juice and mix. Serve your veggies with the chicken and enjoy.
