Easy recipe: Oven-baked BBQ beef short ribs

We all know any recipe with beef is always welcome during the festive season and here is an easy BBQ beef short rib recipe you should try.

The best part about it is that it doesn’t require a charcoal grill. Below is the recipe as prepared by Chef Cindy Gahai:

Ingredients

1kg beef short ribs

For the ribs dry rub

2 tsp salt

1tsp black pepper

1tsp paprika

1tsp garlic powder

1½ tbsp Dijon mustard

For the BBQ sauce

1 cup ketchup

¾ cup dark brown sugar

1½ tsp apple cider vinegar

1½ tbsp Worcestershire sauce

¼ tsp black pepper

¾ tsp Spanish paprika

¼ tsp cayenne pepper

Instructions

Preheat the oven to 180°C.

Season the ribs by rubbing with Dijon mustard, paprika, salt and pepper, then arrange ribs in a baking dish.

In a small bowl, combine all of the BBQ sauce ingredients and stir until smooth.

Pour about ½ cup of the sauce over the ribs. Using tongs, flip the ribs over and spoon another 1/3 of the sauce over top.

Reserve the remaining BBQ sauce to brush over the cooked ribs.

Cover the baking dish with aluminium foil and roast for 2½ hours.

Remove the foil and, if the cooking liquid is covering the meat, cook for 30 minutes more, uncovered, until the meat is tender and browned and the liquid reduced.

Transfer the short ribs to a serving platter and serve.

Oven-roasted goat meat

Ingredients

2kg goat meat

2tbsp garlic purée

1tbsp ginger purée

1½ tbsp soy sauce

Salt

Instructions

Preheat the oven to 180°C.

Season the meat with the above ingredients.

Place in a baking tray and cover with aluminium foil. Place in the oven and cook for about 2½ hours or until all the juice is completely reduced and meat is well browned.

Serve with a starch of your choice.

Trick: This is a go-to recipe when you are craving nyama choma and don’t want to make it on a charcoal grill.
