Does anyone else have trouble convincing their little ones to eat veggies. I came across some tips that could help your child fall in love with vegetables:
My child won’t eat vegetables
• Offer plenty of vegetables and fruit during the day and then don’t worry if they don’t eat vegetables during the evening meal.
• Mash or grate vegetables into mince dishes, pancakes, soups, pizza and dips.
• If your child likes mashed potato, also mash in pumpkin, sweet potato, carrot or peas to make different colours.
• Offer sticks of steamed vegetables with a dipping sauce.
• Set a good example by eating vegetables yourself.

Ingredients:
2 cups vegetables, grated – courgettes, carrots, red, yellow peppers, mushrooms 1 cup self-raisin flour, sifted 1egg, beaten Some milk Pinch of salt and pepper to taste
Directions:
Put the flour in a bowl, make a hole in the middle and add the egg and milk and mix into a smooth batter.
Thereafter add the grated vegetables, salt and pepper, mix until all the ingredients are well blended - add more milk if you need more wetness.
Over medium heat, place a pan, lightly grease it, then pour some batter into the pan and spread (making the pancake as thick or thin as you would like them-tilt the pan from side to side to ensure the batter spreads evenly).
Fry until golden brown on both sides.
Serve with sausages, cooked ham or bacon on the side. Don’t forget the hot chocolate.
