If there is one saviour meal that is undisputed, that would be fries, otherwise known as chips in Kenya or chipo in Sheng'. It is a saviour because whether you are cooking it for yourself or buying it from a restaurant, it will save time and money.
Some people find making chips tiresome while in the real sense, it is such an easy and fast meal to make at home. The process that makes this tiresome is the peeling of potatoes and cutting them into desired shapes and sizes. Once this is done, it becomes a walk in the park.
There are different ways one can make fries. After slicing the potatoes, one can choose to boil them slightly for less than 10 minutes before deep frying them until they are ready. Other than that, there is the option of deep frying them directly.
There are a variety of ways one can serve this delicacy and this is what we shall be discussing today. Let's start with an easy chapo chipo mixture. This might not be a common meal but among the campus students, it is one of their girl dinners.
It is as simple as wrapping fries in a chapati and adding sauces of your choice. The sauces play a big role since without them.
You can also mix fries with meat like beef or chicken to spice up the meal. The procedure is simple. All you need to do is make stew out of the meat and add your fries as soon as the stew is ready. This is a finger-licking combination that you can get addicted to.

Chips masala is another mixture we cannot choose to ignore. Let's see how to make this at home.Instructions:
Peel the potatoes and cut them into thin fries. Rinse the cut potatoes under cold water to remove excess starch.
Heat oil in a deep fryer or a heavy-bottomed pan to around 175-190C. Carefully add the potato fries in small batches to avoid overcrowding.
Fry until they turn golden brown and crispy. Remove them using a slotted spoon and place them on a paper towel to absorb excess oil.
In a small bowl, combine red chilli powder, chaat masala, turmeric powder, cumin powder, coriander powder, garam masala, amchur, and salt. Adjust the spice levels according to your taste.
While the fries are still hot, transfer them to a large mixing bowl.
Sprinkle the prepared spice mix over the hot fries and toss them gently to ensure even coating.Garnish the masala-coated fries with freshly chopped coriander leaves.
Serve and enjoy your homemade Chips Masala as a delicious and flavourful snack. You can also pair it with ketchup or your favourite dipping sauce.
