Spicy boneless chicken with hummus [Courtesy, Chef Ali Mandhry]

Today we make spicy boneless chicken with hummus.

For the chicken:

1/2kg boneless chicken breast cubes

2 tablespoons vegetable oil

1 teaspoon curry powder

1 teaspoon paprika

Salt to taste

1 teaspoon coriander powder

Juice of 1 lemon

1 teaspoon soy sauce

Method:

In a pan over medium heat, add the oil and saute the chicken.

Add the spices and mix well.

Add the salt and lemon juice, stir and simmer.

Now add the soy sauce and cook until the oil starts to bubble up. Once ready, pour over the hummus.

For the hummus:

1 can chickpeas

1 clove garlic

2 tablespoons vinegar

1 tablespoon tahini

Salt to taste

2 ice cubes

4-5 olives

1 tablespoon olive oil

Method:

In a blender add the chickpeas and pour out the liquid.

Add the garlic clove, olive oil, vinegar and salt and blend.

Now add the tahini and ice cubes and blend until smooth.

Pour over a plate and garnish with olives.

Add the cooked chicken on top and serve with your favourite bread.
