One whole chicken

One teaspoon of black pepper
One teaspoon of garlic powder
One teaspoon of paprika
One teaspoon of dried herbs (such as thyme, rosemary, or sage)
One lemon, halved
One onion, quartered
Four garlic cloves, peeled
One cup of chicken broth
Instructions:
Preheat your oven to 220C. Next, make sure the chicken is clean and pat it dry with paper towels.
In a small bowl, mix the softened butter, salt, black pepper, garlic powder, paprika, and dried herbs until well combined.
Rub the butter mixture evenly all over the chicken, making sure to cover all areas, including under the skin.
Place the halved lemon, quartered onion, and peeled garlic cloves inside the cavity of the chicken. This will add flavour and moisture to the meat.
Truss the chicken by tying the legs together with kitchen twine. This will help the chicken cook evenly and maintain its shape.
Place the chicken on a roasting rack in a roasting pan. Pour the chicken broth into the bottom of the pan to help keep the chicken moist.
Place the roasting pan in the preheated oven and roast the chicken for about 1 hour and 30 minutes. After about 30 minutes of roasting, baste the chicken with the pan juices every 20 minutes or so. This will help the chicken stay moist and add extra flavour.
Once the chicken is fully cooked, remove it from the oven and serve with your favourite side dish. Enjoy!
