Four cups of vegetable or chicken broth
One cup of heavy cream
Two tablespoons of butter
Two tablespoons of all-purpose flour
One teaspoon of thyme
Salt and pepper to taste
Fresh parsley or chives for garnish (optional)
Instructions:
Heat a large pot over medium heat and melt the butter. Add the onions and garlic, and saute until they become translucent and fragrant.
Add the sliced mushrooms to the pot and cook until they become tender and release their moisture. This usually takes about 10 minutes.
Sprinkle the flour over the mushrooms and stir well to coat them evenly. Cook for another two minutes to remove the raw flour taste.
Slowly pour in the broth while stirring continuously to prevent lumps. Bring the mixture to a simmer and let it cook for about 15-20 minutes, allowing the flavours to meld together.
Using an immersion blender or transferring the soup to a regular blender, puree the soup until smooth. If you prefer a chunkier texture, you can blend only a portion of the soup, leaving some mushrooms intact.
Return the soup to the pot and stir in the heavy cream. Add the thyme, salt, and pepper, adjusting the seasonings to taste.
Allow the soup to simmer for an additional five minutes to heat through and let the flavours blend.
Serve the mushroom soup hot, garnished with fresh parsley or chives if desired. You can also drizzle a little bit of cream on top for added richness. Enjoy!
