For this recipe, you will need chicken breast that is flattened. I like to use turmeric and some garlic in a touch of honey to bring that sweet and savoury flavour.
This recipe goes well with fries or potato wedges and a side of your favourite veggies. I like to serve it with my sukuma plus, which is a combination of spinach and sukuma wiki.

500g chicken breast
1 onion

1 tspn turmeric
1/2 tspn cayenne pepper
2 tbspn honey
1 lime juice
2 tablespoon chopped coriander
Salt to taste

What to do:
In a blender, add the onion, honey, garlic ginger paste, lime juice, 1 tablespoon coriander and all the spices. Blend to a smooth paste.
Pour the mixture onto the chicken, and mix well. Let it marinate in the fridge for an hour.
Pour two tablespoons vegetable oil in a hot non-stick pan. Add the chicken (reserve the remaining marinade) and pan sear on both sides until slightly golden brown.
Reduce heat, cover the pan and let the chicken steam and cook inside.
Once cooked, pour in the reserved marinade, adjust seasoning with salt and let it cook further so that the flavours combine well and the honey caramelises on the chicken.
Sprinkle some coriander on the chicken and serve with potato wedges, your favourite greens and some hibiscus tea on the side.
