1 cups cold expresso coffee
1 cups cold heavy whipping cream
cup icing sugar
One tsp. vanilla extract
Mascarpone cheese
Dark rum (optional)
Cocoa powder
Step one
First, you will need to prepare about 1 cups of expresso or a strong alternative. This is key for this recipe because a heavy coffee flavour is one of the main features of tiramisu cake. You could use instant coffee but you could also brew some from scratch for that high-quality taste.
Once you have your coffee ready, let it cool for a few minutes and pour in cup of dark rum if you choose to. You will then set this aside for it to completely cool or you could even put it in the fridge to accelerate the cooling process.
Step two
In a clean bowl, add about two cups of mascarpone cheese. You could add another cup of dark rum and mix together until well combined.
In your mixer pour in cold heavy whipping cream and one teaspoon of vanilla extract. Whip as you slowly add in the sugar, until it precisely reaches a stiff peak. If you don't have a mixer, you can simply achieve this by whipping in a bowl.
Next, fold the whipping cream gently into the mascarpone cheese until everything is well combined.
Step three
Now, it is time to assemble so you will get your coffee and rum mixture and the ladyfingers. Have a baking dish ready, then you will dip both sides of each ladyfinger quickly (two seconds should be enough.) If you dip them in for too long, you will end up with a soggy texture.
Give them a quick dip and assemble them in the baking dish for your bottom layer. Next, scoop and spread half of your creamy mixture on the top of that bottom layer of lady fingers.
Add your second layer of lady fingers then scoop and spread the remaining creamy mixture. For the final touch, dust some cocoa powder on the top.
Step four
Lastly, place your tiramisu in the fridge overnight or for a minimum of six hours for it to firm up. Once that's done, slice it and serve!
