How to prepare delicious caramelised onion smothered chicken [Courtesy, Chef Ali]

Ingredients:

1kg chicken thighs and drumsticks

2 tablespoons vegetable oil

1 teaspoon ginger mince

1 teaspoon garlic mince

1 teaspoon black pepper powder

1 teaspoon sunrise curry powder

1 teaspoon paprika

1 teaspoon jeera/cumin whole

2 tomatoes, blended

70g tomato paste

Juice of 1 lime (1 frozen lime juice cube)

3 onions, fried until golden. Salt to taste

Method:

In a pot over medium heat add the oil, and saute the chickenuntil golden brown.

Add the garlic and ginger mince and mix well.

Add the black pepper, curry powder, paprika and jeera and mix.

Now add the tomato puree and cook for two minutes.

Add the tomato paste and lime juice and stir.

Add the fried onions and cook until the oil bubbles up. Serve with rice or chapati, with vegetables on the side.
