This egg smothered with onions and herbs and spices makes a delicious treat. You can have this on its own or with rice or potatoes.

WHAT YOU WILL NEED:

6 eggs, boiled

4 large onions, sliced

3 tablespoons oil

2 teaspoons paprika

1 teaspoon oregano

2 chicken bouillon cubes

2 garlic cloves, chopped

1 teaspoon curry powder

1 teaspoon sugar

1 tablespoon vinegar

Juice of one lime

1/2 teaspoon black pepper

Salt to taste

WHAT TO DO:

In a nonstick pan over medium heat, drizzle the oil and add the onions and saute until soft. Add the paprika and oregano and crumble in the chicken cubes. Mix well.

Now add the garlic and curry powder and mix some more. Add the sugar and stir (this will balance the strength of the spices and make it slightly mild).

Pour in the vinegar and lime juice of one lime and stir. Adjust the seasoning with salt and black pepper, and thoroughly mix.

Once thick, add the eggs and stir with a spatula, coating the eggs with the onions. Once cooked, pour into a serving bowl.

Serve with fried rice or sauteed potatoes. Enjoy!
