Nothing beats a Swahili dish any time of the day and this frosted doughnut (mitai) recipe will blow your mind

For the dough:

What you need:

3 cups flour

1 and 1/4 cups coconut milk

1 tbsp margarine

1 tbsp yeast

1/4 tsp ground cardamom

Oil

What to do:

In a big bowl add the flour and make a hole in the centre. Add the yeast, cardamom, margarine and coconut milk and mix well.

Now knead until you get a soft dough. Cover the dough and let it rise.

Next, roll the dough and cut it into squares or diagonals. Deep fry them until golden brown, and set them aside to cool.

For the frosted sugar coating:

What you need:

2 cups sugar

1 cup water

In a pot cook the syrup until it becomes slightly sticky, then remove it from the heat. Place a pot on a medium-high heated stove and pour half the cooked syrup.

When the syrup starts bubbling, put half of the cooked mitai and gently flip them until the sugar syrup becomes dry and frosts the mitai. Repeat with the remaining mitai.

Serve with black tea. Enjoy!
