If your resolution is to eat more homemade food this year rather than eat out, you're on track. You may, however, be feeling the pressure of having to spend lots of time in the kitchen. The microwave can be your saviour by assuring you saved time and well balanced quick meals. Here are some of the dishes you can try:
You need: ½ cup rice, 1 cup water, 1 tablespoon soy sauce, 1 teaspoon olive oil, 3 strips bacon, chopped, ½ cup frozen pea and carrot, 3 eggs, salt, to taste
Process: In a bowl, combine the water, rice, soy sauce, olive oil and bacon. Stir, then microwave, covered, for about 8 minutes, until the rice is fully cooked. Mix the frozen peas and carrots into the rice. Beat the eggs with the salt in a microwaveable mug and microwave them for 2 minutes. Break up the egg into small bits, then mix it in with the rice
You need (For one serving): 2 eggs, ½ bell pepper, diced, ¼ cup fresh spinach, 2 slices ham, diced salt, to taste, pepper to taste.
Process: Mix all ingredients in a microwaveable mug and cook for 2-3 minutes. Ensure the egg doesn’t bubble over by stirring at the one and half minute mark.
You need: ½ cup elbow Macaroni, ½ cup water, 4 tablespoons milk, ¼ cup shredded cheddar cheese, salt, to taste, pepper, to taste
Process: Mix all the macaroni, water and salt in a microwaveable mug and microwave for 2-3 minutes, then stir. Add the milk, cheese, salt and pepper, stirring again. Microwave for another 30 seconds, stir and serve.
You need: 1 washed sweet potato, 1 tablespoon oil, 2 slices bacon, ¼ cup shredded cheddar cheese, salt, to taste.
Process: Poke some holes in the potato with a fork, then rub with oil and salt. Place the bacon slices on the same plate as the potato, microwave for 7-9 minutes until the bacon is crispy and the potato is tender, ensuring the bacon does not burn then crumble it.
Slice the potato in half, then use a fork to fluff up the insides. Sprinkle the cheese on top, then microwave for another 30 seconds.
