In the last couple of weeks, I have come across a great deal of strawberries. But despite my lucky find, what I could think of was a quick fruit salad. As I browsed through recipes for ideas, I came across this one. The results were amazing......most jam recipes take a while to prepare. This recipe takes me 15 minutes to prepare and on top of that, the chia seeds add great nutritional value.

 

Serves: 1-2 people Prep time: 5 minutes Storage time: An hour to 12 hours Ready In: 15 minutes

 

Ingredients: ? 1 cup finely chopped strawberries ? 3 tablespoons orange juice ? ½ to 1 tablespoon of agave syrup (or honey or maple syrup) ? 1 tablespoon chia seeds

 

Directions:

Mash the strawberries with a fork, mix all the ingredients in a jar and keep in the refrigerator for about an hour to 12 hours.

Spread on fresh toast.
