Serves two very generously
Ingredients
- 180g penne pasta, cooked to instructions
- 1 tbsp flour
- 1 tbsp butter
- 425ml milk
-170g strong cheddar
- 6 chopped sun-dried tomatoes in oil
- 1 red or yellow onion, finely chopped
- 2oz grated Parmesan or cheddar cheese for topping
- 1-2 sliced tomatoes for topping
- 2 tbsp chopped parsley
- Salt and pepper
Directions
1. Add a knob of butter to a non-stick pan and melt. Gently cook the chopped onion till soft, then remove and set aside.
2. Melt the rest of the butter and add the flour. Whisk until smooth and slowly add the milk, stirring. Season, reduce the heat and simmer for 10 minutes, stirring now and again.
3. Stir in the cheese, sun-dried tomatoes, cooked onions and parsley.
4. Pour the sauce over the pasta, give it all a stir and put into a flameproof dish.
5. Arrange the tomatoes around the edge and sprinkle the cheese on top. Brown under the grill.
