The round, green and delicious legumes known as peas, minji in Kikuyu or njegere in Swahili, are a delicacy that can never go wrong with any meal, as long as they are cooked properly.
They are most often used to make the popular potato, meat and pea combo. However, they can also be used to make other dishes such as mokimo, where they are used in place of beans.
Peas are not only used for full meals but also light snacks. They can be added to salads or used with pasta.

1 cup of peas
1 tablespoon of ginger and garlic paste
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 onion
Chile, optional

Instructions:
Cook the peas for a few minutes and set aside. Take care not to overcook them, as they will make the dish soggy.
Wash the rice, drain and set aside. Heat enough oil in a clean saucepan.
Add the chilli and cook for 10 seconds before adding the onions. Sauté until translucent.
Add the garlic and ginger paste. Stir until fragrant. Add the green, red and yellow peppers. Stir until soft.
Now add the boiled peas. Stir and cover to allow the flavours to penetrate. Add three and a half cups of water.
Cover and bring to the boil. Carefully add the rice. Stir gently and cover to cook.
Check regularly to make sure it is not burning. When the water has evaporated, leave the food covered for about 10 minutes.
It is then ready to serve. You can make guacamole or any other salad and serve it with this dish. Enjoy!
