Today we make saucy matumbo
Ingredients:
1/2 kg of boiled tripe (matumbo)
2 tablespoons vegetable oil
4 tomatoes, roughly chopped
1 capsicum, cut into strips

Fresh coriander, finely chopped
1 teaspoon of mchuzi mix (diluted in 1/2 cup water)
1 large red onion, diced
50g tomato paste
Salt to taste
1 teaspoon garlic mince
Juice of 1 lime
1/4 cup of water
Method:
In a pot over medium heat, pour in the vegetable oil. Add the onions and sauté until golden brown.
Add tomatoes and salt, and cook for about five minutes, or until they are well cooked.
Add the tomato paste, mchuzi mix and matumbo and mix.
Add the capsicum, cover and simmer for a few minutes.
Add the water, cover and simmer.
Add the lime juice and mix.
Garnish with coriander.
Serve with ugali. Enjoy!
