Fried whole fish with kachumbari [Courtesy, Chef Ali Mandhry]

Ingredients:

1 whole tilapia fish 

2 to 3 tbsp ginger/garlic paste

1 tsp curry powder masala

1/4 tsp red chilli powder

Salt to taste

1/2 tsp ground black pepper

Lemon juice Oil 

Method:  

Thoroughly clean the fish with cold water.

Lightly make cuts on the fish’s entire length on both sides.

Mix all the other ingredients and marinate the fish.

Put the marinade in the cuts on the fish.

In a frying pan, add some oil and heat the oil.

When the oil is hot, add the fish and fry.

When one side is cooked (should have a golden brown colour), gently flip the fish to the other side and cook the other side as well.

When both sides are cooked, remove from the heat and place on a plate with a paper towel on top to soak any access oil.

Serve the fish with kachumbari and ugali plus sauteed greens.
