It is amazing how freshly cut vegetables can transform a basic meal into a delicacy, without altering the taste of your food.
Kachumbari can be served with a range of meals starting with the best combo being pilau, to potato dishes without forgetting the Lake side fish dishes.

One Tomato (Semi ripe)
An onion
Coriander leaves
Lemon/ White vinegar
Two Green chilies
Salt
Method:
This recipe should take you approximately 5 minutes.
First, finely cut your tomato, onion, green chilies and coriander into one bowl, then add some salt and stir using a spoon. Next add some lemon juice or white vinegar (depending on what you prefer) and stir the mixture.
Once done, you can freeze your Kachumbari for 10 minutes or eat it as it is.
If you need your Kachumbari mixture to last for more than a week, you could blend the mixture instead and store it in an airtight container in your fridge.
